Under the scratch plate of our beloved guitars seems like a complete mine field that will send most of us running to the local guitar tech.
Hopefully, we can guide you through the basics so you know what your looking at when something needs replacing.
Lets Start with the Basics.
Linear pots(Alpha B) are generally used for volume control, and Logarithmic(alpha A) are used for Tone.
The reaon for this is that Linear pots (Alpha B) give a true represntation of the output, (so 1 on the dial is 10% of the output, 5 is 50% and 10 is 100%). This means their a good all purpose pot, that can be used on both tone and volume.
Logarithmic (alpha A) pots (or Audio Taper) are a little bit more complicated. They offer very little control from 1 - 5 (jumping for 0% to 60 or 70% very quickly. Anyone whos played a fender hotrod will know exactly what thats like, as you reach percieved maximum volume at about 4 on the dial). As a tone pot their quite handy when you consider that, from 5 to 10, your covering less ground, giving you much more control over your sound. Considering very few of us roll the tone down past 5, the trusty Logarithmic pot still has its uses when fine tuning your sound.
Oddly, Fender and Gibson use Audio Taper (log) pots for Most of their products (usually CTS) and get good results, so at the end of the day, it all comes down to what you preffer from a guitar. More control over the full range, or more control over the top/bottom end.
As a quick and easy rule of Thumb, we use this guide.
1Meg = very bright sounding
500K = bright sounding
250K = warm, vintage sounding
Problems can arrise when your running a Humbucker in the same guitar as a Single Coil, but these are the results we've found.
1Meg = bright HB, shrill SC
500K = warm HB, bright SC
250K = muddy HB, warm SC
Basically, you'll always suffer slight compromise by running single coils next to humbuckers when it comes to pots. The saving grace is that 90% of use have been to too many gigs to notice any real differance. Comes down to a litle bit of audio snobbery at the end of the day, which is never a bad thing.

"Caps" or Capacitors are something that 99% of us never consider when building or modifiying our guitars, but their a great way to alter your sound without too much effort.
Lets start with the rough and ready guide that will help determine what you actully need.
The Most Common Capacitor Values are as follows -
Our person favourite Cap size. Allowing a good balance between Bass, Middle and Treble, Plenty of mid range without compromising on the extreme ends of the spectrum. Absolutely perfect on single coils. Also, a standard on Gibson Humbuckers.
These are the standard in most single Coil Strat style guitars, they cut out a small amount of brights, but boast a very strong mid range that carries through in the mix. Giving a slightly fuller sound than the 0.022s, great if your getting drowned out by the rest of a band.
These are as far as your really want to go with your guitar (or bass). Nearly all of the bright top end is gone, leaving behind plenty of bass and middle. Great for full blown distortion. We prefer to use these with humbuckers, as we preffer the slightly dark tones, but its not a hard and fast rule (as Gibson prove very well).

The other aspect to consider is the Voltage of your Caps, but unless you've got ears like a safe cracker, its not going to make the world of differance to you. It is however worth considering for historical accuracy.
The quick rule of thumb is that early gibson and fenders (50s - 60s) used 400v caps as they where left over from amp builds. Its a great way to keep a build as close to the blue print as possible.
There is also a purist arguement that the higher the voltage, the less grain you get in your sound, but, in all honesty, we cant tell the differance, but you never know, you might have those magic ears that can make out the differance... Too many gigs have ruined our chances though.
Once, you've made your choice, its simply a case of following your wiring diagrams and soldering the cap into place on the tone pot, and then reaping the rewards.
